Spicy Hawaiian Fried Rice
2 Tablespoons vegetable oil
1 Small Onion, chopped
1 Sprig Scallion, chopped
1 Clove Garlic, minced
1 Tablespoon cinnamon
1 Teaspoon Black Pepper
1 Tablespoon Lime Juice
1 Tablespoon Soy Sauce
1 Ounce Cilantro, chopped
½ Cup of mixed vegetables:
Red Bell Pepper
¼ Pound Protein (choose one or more):
1 Tablespoon Sriracha Sauce (or any hot sauce)
1 Teaspoon Cayenne Pepper (optional – adds a bit more of a kick)
Steam the mixed vegetables in boiling water. Cut the vegetables any way you want.
Cook the protein (grill, deep fry or in the oven) – slice or dice the protein anyway you want.
Step 1 – Heat 1 tablespoon of the oil in a wok or skillet on medium high heat. Add the egg and stir fry until scrambled (or sunny side up). Remove egg from skillet.
Step 2 – Heat remaining 1 tablespoon oil on Medium High. Add the onion, chopped garlic, cinnamon, lime juice and soy sauce. Stir for 3 minutes or until the onion is slightly brown.
Step 3 – Add the cooked protein, add the Sriracha Sauce, black pepper and cilantro. Stir for 1 minute. Add the remaining vegetables.
Step 4 – Add the rice and stir in for another 2 – 3 minutes or until the rice is heated.
Step 5 – Remove the rice and place the egg on top; scatter scallions on top
